Mock conger eel in a bento box.

Conger eel is not something I eat all that often.
However, when it comes to making mock dishes with tofu, for some reason, I find myself thinking about conger eel a lot.
The other day, I made something called mock eel.
I mashed the tofu with a fork, pressed it flat into a frying pan, cooked it thoroughly, and added kabayaki sauce.
That turned out quite well.
My husband ate it without saying a word, so I assume he liked it.
In our house, my husband not saying anything usually means it was good.
So, this time I went with conger eel.

Smaller than the eel, I cooked it while adding a pattern.
I mashed the tofu and scratched it with a fork to create a browned look, and this process was surprisingly fun.

I thought it looked like something, and after a moment, I realized it felt like when I used to make things out of clay in elementary school.
Back then, I could usually only make things like snakes or slugs out of clay, and this gave me a similar sense of accomplishment.
I seasoned the rice with sesame seeds, bonito flakes, and noodle soup base.

I shaped these into balls, topped them with the mock conger eel, and wrapped them in nori seaweed.

It ended up looking just like sushi.
It is mock conger eel nigiri sushi.
It's not the real thing, but for what it is, it looked somewhat impressive.
The side dishes were a green onion omelet and pork-wrapped zucchini.

Pork rolls also had cheese and kimchi inside.
When you think about it, cheese and kimchi are a good combination, with the spiciness and mellowness coexisting quite well.
But I packed them without really knowing how they would turn out inside the bento.
Well, I figured it would work out somehow.
Finally, I drizzled on some kabayaki sauce, and it was done.

The inside of the bento box turned a lovely color, and regardless of whether it was the real thing or not, it looked like a proper bento.
My husband finished it all again today. No comments.
