[Repeat-Worthy Divine Noodle Arrangement Series ②] Clam Kalguksu / Zero-Carb Noodle Kongguksu / Korea🇰🇷 / Chilled Soy Milk Somen / Time-Saving / Easy

Annyeonghaseyo, this is Non.
In an article two weeks ago, I thought, 'I'm going to recreate Myeongdong Kyoja's Kalguksu!', but for some reason, I ended up making mandu instead (lol).

I was determined, 'Okay, today is the day I make Kalguksu!', but Kalguksu actually comes in a huge variety of types: clam, chicken, beef bone, pork, etc. I was in the mood to enjoy some seafood for a change, so I've put the Myeongdong Kyoja recreation recipe on hold again, and this time I'm making 'Clam Kalguksu'.

And for another dish, one I highly recommend for those on a diet is the Korean summer staple, 'Kongguksu'. By using zero-carb noodles, you can eat the whole thing for only about 170 kcal! It's also low-carb and gluten-free! This is a healthy recipe perfect for those who are thinking, 'I've been worried about my belly lately' or 'I want to slim down a bit before summer!'

This week, I'll be delivering a three-part 'Chilled Noodle Series' based on soy milk. These are refreshing and healthy recipes that you can slurp down even on humid days. Please look forward to the next one!

Ingredients for Clam Kalguksu

Bajirak Kalguksu

Noodles 80g (flat noodles, frozen udon, etc.)
Clams 100g (sand removed)
Shiitake mushroom 1, thinly sliced
Zucchini 35g, julienned
Onion 1/4, thinly sliced
Carrot 35g, julienned
Green onion 1/4, thinly sliced
Grated garlic 2/3 tsp
Salt 2/3 tsp
Soy sauce 2 tsp
Granulated kelp dashi 1/2 tsp
Granulated dried sardine dashi 1/2 tsp
Pepper to taste
Water 500ml

※ For the noodles, fresh flat noodles or thin frozen udon are closest to the authentic ones. If you are on a diet, you can use zero-carb noodles, etc. I used Vietnamese pho noodles. Since rice noodles don't produce much of that characteristic thickness, the flavor turned out quite light.

※ The soup stock is often made with kelp and dried sardines, but this time I used granulated dashi to save time. Using clam dashida or myeolchi-aekjeot (Korean fish sauce) also makes for a delicious, authentic-tasting Korean Kalguksu.

Instructions

1. Put water in a pot and turn on the heat. Just before it boils, add the clams and turn to medium heat. Once the clams start to open, add the granulated dashi, vegetables, garlic, and shiitake mushrooms, and cook over medium to low heat for about 3 minutes.

2. Add the noodles, salt, and soy sauce, cook over low heat, and once the noodles are soft, turn off the heat and it's done. Serve in a bowl and sprinkle with pepper (to taste).

Done👏 It's a compassionate, gentle flavor.

Ingredients for Zero-Carb Noodle Kongguksu

Zero-carb noodles 1 pack (udon type)Keep chilled

Sauce
Firm tofu 100g
Unsweetened soy milk 120ml
Mentsuyu 1/2 tsp
Shiro-dashi 1/2 tsp
White sesame seeds 1 tsp
Peanuts about 5 (optional)

Toppings
Cucumber 15g, julienned
Kimchi to taste
Tomato 1 slice
White sesame seeds, a little
Salt or Lakanto

※ Somen or hiyamugi noodles are generally used.

I used this one this time.

I received some Kayonoya dashi-tsuyu,
so I tried using it right away.

Instructions

1. Mix the sauce ingredients in a mixer or blender until smooth, transfer to a container, and chill in the refrigerator for at least 30 minutes.

2. Place the chilled, drained zero-carb noodles and the sauce into a bowl, add toppings, and it's ready.

It is naturally mild in flavor, so please add salt or Lakanto little by little to taste when eating.

Delicious♡(*´~`*)ŧ‹"ŧ‹"ŧ‹"

Even with a second serving of zero-carb noodles, it's only 190kcal‼️ A delightful menu you can enjoy seconds of even while on a diet.

This week, I will be delivering a 3-part "Chilled Noodle Series" based on soy milk. These are refreshing and healthy recipes that you can slurp down even on sweltering days. Look forward to the next one!
