"There is a row of dipping sauces for the hot pot, and the system is to go and put them in your own small bowl. In addition to the three basic sauces, you can customize the flavor to your liking. There are 13-14 types including vinegar, chili oil, chili pepper, cilantro, green onion, sugar, and fish sauce. The shop staff said it was okay to put everything in. I don't know what it tastes like, but I put this and that in with a spoon and return to my seat. The inside of the small bowl looks like a mud pack." p.113
"A large amount of finely chopped fermented Chinese cabbage is in the soup. Thinly sliced pork, crab, shellfish, etc. are submerged, so you pick up the cabbage with chopsticks and dip it in the sauce mentioned earlier to eat it.
The Chinese cabbage is close to German sauerkraut. It's a sour hot pot. When dipped in the rich sauce, the acidity is moderately neutralized, and the 'delicious!' spreads in my mouth."
