<Ingredients> (For 1 person)
A) Egg: 1
Salt: a pinch
B) Water: 100ml
Oyster sauce: 1 tbsp
Potato starch: 1 tsp
Soy sauce: 1 tsp
Mirin (optional): 1 tsp
Lettuce: 1/4 head (approx. 100-150g)
Ginger: 1 knob
Rice (warm): 1 bowl
Sesame oil: as needed
********************
Add salt to the egg in A and beat it.
Mix the ingredients for B.
Heat a frying pan, add sesame oil, then add the lettuce and ginger and stir-fry quickly.
Clear a space in the center, add a little more sesame oil if desired, add the egg from step 1 followed by the rice, stir-fry so the egg coats the rice, then stir-fry everything together and remove to a plate.
Add B to the empty frying pan, heat while stirring, and once it thickens, pour it over the dish from step 4.
********************
・You can reduce the amount of mirin to your liking, or omit it entirely.
・Adding mirin makes it milder, but slightly sweeter.
・The amount of lettuce is up to you.
・You can also use wilted leaves or the tough outer leaves.

Delicious-looking lettuce has
started appearing in stores.
From early spring to summer is the best time to eat lettuce.
It tastes even better,
and the price drops significantly.
When you think of lettuce, you think of salads,
but sometimes it's hard to finish a whole head of lettuce.
In those cases, try cooking it.
I've introduced soups and steamed dishes before,
but this time it's fried rice.
Lettuce fried rice is popular,
and I'm sure there are many delicious ways to make it,
but I think many people find it hard to stir-fry well.
Some people don't know how much to cook the lettuce,
or they cook it too much and it releases water, making it soggy.
For those people, this is the lettuce fried rice I really want you to try.
There are two points to the Okuzono style:
1. Stir-fry the lettuce first
For lettuce fried rice,
there is a way to add the lettuce at the end,
but by stir-frying it first,
it's very easy to see how well the lettuce is cooked,
and the best part is that you can use up everything,
from the wilted leaves to the hard core, perfectly.
By adding the ankake sauce,
even if the rice gets a little mushy, it's no problem at all,
which is another great point.
2. Okuzono-style Ankake
Since the potato starch is mixed into the sauce seasoning,
you just pour it into the frying pan and stir to finish!!
It's easy and foolproof!!
Furthermore,
since you eat the fried rice with the flavor of this sauce,
there's no risk of failing the seasoning either!!
It's a fried rice dish with nothing but pros.
The amount of lettuce can be more or less,
you're free to decide that without any issues,
and it's also great that you can eat more lettuce than you'd think.
When eating,
it's good to make it spicy with chili oil or pepper,
and drizzling some vinegar over it makes it nice and refreshing too.
Please, by all means, give it a try.
