Updating popular menu items into guilt-free, healthy versions. Turning the stress of “I can't eat that” into the joy of eating with peace of mind. I bring you reproduction recipes that satisfy both your heart and your stomach.
This is the second installment of the series! Surprisingly, the signature menu item from “Ippudo,” the Shiromaru Motoaji, is now available in a healthy version✨️ And amazingly, you can leave the soup and chashu pork to the “rice cooker”😊 I will introduce a reproduction recipe that uses zero-carb noodles to significantly reduce calories!

[Ingredients] Serves 1
Zero-carb noodles: 1 pack
Soup & Chashu
Pork block: 100g
Water: 850ml (approx. 5 cups)
Salt koji: 1 to 1.5 tsp
Salt: 1/2 tsp
Dashida: 1 tsp
Onion: 1/6, grated
Grated garlic: 1 tsp
Grated ginger: 1 tsp
Sauce
Somi Shantan powder: 1/3 tsp
Sesame sauce: 1 tbsp
Unsweetened soy milk: 2 tbsp
Toppings
Wood ear mushrooms: thinly sliced, as desired
Green onions: finely chopped, as desired
* Since it is difficult to make the soup and chashu for just one person, this makes about two servings. Please enjoy the leftovers in fried rice, Chinese soup, or mixed rice.
* Regarding zero-carb noodles, the Konjac Park brand is softer, while Kibun feels more like ramen. Please choose according to your preference.

Instructions
① Pierce the pork all over with a fork, coat with salt koji, and let it sit for about 30 minutes.

② Brown the entire surface in a frying pan.

③ Place the soup ingredients and the seared pork into the rice cooker inner pot, and press the button for “Brown Rice Mode” (70 minutes).

④ Once the rice cooker finishes, remove the chashu and the soup is ready.

[✴️Important✴️ Finishing the Soup and Adjusting the Flavor]

Check the flavor: After cooking, stir the soup well from the bottom and taste it.
If the saltiness is just right, it's good to go.
If it's too salty, add about one ladle of water.
Reheat: Close the rice cooker lid and press the cook button again to heat for 10 minutes.

Prepare the bowl and noodles (while reheating):
Put the sauce in a bowl and heat in the microwave (500W) for 1 minute and 30 seconds.
Heat the drained noodles in the microwave (500W) for 2 minutes.

Finishing touches: Pour the piping hot soup into the bowl and mix well.
Do a final taste test; if it's too strong, add a little hot water, and if it's too weak, add a small amount of Somi Shantan to adjust.

Add the noodles to the soup, garnish with sliced chashu and toppings, and it's done.
