Quinoa and Adzuki Bean Stew
A movie I watched at home 5 or 6 years ago after a friend recommended it.
I suddenly remembered it yesterday and watched it again.
"The Intern" 🎬✨
For some reason, I've seen quite a few Anne Hathaway movies, and I've watched several others too. She is one of the few Hollywood actors whose face and name I can actually match.
I'm especially bad at remembering foreigners. I can only assume my brain is programmed to automatically reject them just because they are "foreign"...
I learned Leonardo DiCaprio from Titanic.
I learned Brad Pitt from Ocean's Eleven, and Keanu Reeves from The Last Samurai.
But... there aren't many foreigners that have stuck in my memory.
Anne Hathaway in "The Devil Wears Prada" was cute, and seeing her chased by work was relatable, just like I was back then. In that sense, "The Intern" was also like watching my old self.

By the way, one person was added to my list yesterday.
I was watching the gentleman smiling next to Anne Hathaway, thinking he really had a great vibe, and it turned out to be the famous Robert De Niro (*’д’*)✨
I had heard the name, but I didn't know his face... I didn't.

Right now, I'm enjoying living my own life.
Rather than 'Deni-iro', it's 'Azuki-iro' (bean color).
Rather than Keanu, it's Quinoa.
I didn't even mean to aim for that...
This stew at this timing. lol
My life is well-crafted.

I was surprised just by tasting it.
This is a harmony I've never tasted before.
Contrary to the unreliable texture of the softly boiled adzuki beans, I feel an incredible amount of energy. When you think of stew, you tend to automatically imagine a thick soup, but this is different. It's a crystal-clear, light stew created with dried shimeji mushrooms and quinoa. It's dense, yet a refreshing stew✨✨ I am completely head over heels for these unsweetened adzuki beans!!

🍅Quinoa and Adzuki Bean Stew🍅
〚Ingredients〛
Quinoa 3 tbsp
Adzuki beans 3 tbsp
Onion 50g
Tomato 100g
Dried shimeji mushrooms 5g
Olive oil 2 tsp
Water 4 cups
Natural salt 1 1/3 tsp
Kombu 3cm square
Watercress (topping) as needed




〚Instructions〛
1. Cut the onion in half vertically and slice thinly against the grain, and cut the tomato into 1cm cubes with the skin on.


2. Rinse the adzuki beans quickly and boil them in 2 cups of water for 15 minutes.



Salt is for the very last step, step 5✨
3. Heat oil in a pot and quickly sauté the onion.

4. Add water, kombu, dried shimeji mushrooms, tomatoes, and the drained adzuki beans, then bring to a boil over high heat. Add the rinsed quinoa, cover, and simmer over medium heat for 30 minutes.

5. If the adzuki beans are soft when you pinch them, add salt and simmer for 5 minutes.



6. Top with watercress and it's done.
