Bistro-Style Salmon Poêlé and Avocado Salad with Homemade Dressing 🇫🇷

Now then, this time I've upgraded my usual 'grilled salmon' to be a bit more stylish, French bistro-style 😊
Even though it's bistro-style, it's actually much easier than it looks! By utilizing store-bought sauces and pre-made items, both the cooking process and ingredients are minimal. This is a menu I can confidently recommend even to cooking beginners.
The star of this dish is, without a doubt, the ensemble of 'sounds'! The crunch of the enoki mushrooms, the crispiness of the salmon skin, and the crunchiness of the oatmeal. Please enjoy the exquisite harmony that these three textures play in your mouth with all five senses.

Avocado Salad with Homemade Dressing
Ingredients (for 2 servings)
1/2 avocado, diced *sprinkle with a little lemon juice
3-4 small broccoli florets
2 cherry tomatoes, cut in half
1 boiled egg, cut into large cubes
Paprika, etc., to taste
Japanese-style dressing
2/3 tbsp mayonnaise
2/3 tsp soy sauce
1/2 tbsp grated onion
1/3 tsp grated garlic
1/3 tsp Lakanto
Instructions
1.Mix the dressing ingredients together.

2. Combine the dressing with the ingredients, mix gently, and place in the refrigerator. Top with the boiled egg when plating.

Bistro-Style Salmon Poêlé
For the basil sauce this time, I used this 'edible olive oil'.
Ingredients (for 1 serving)
1 salmon fillet
Basil sauce (store-bought is fine), as needed
Used homemade edible olive oil
Enoki mushrooms, bite-sized? 2-3 bunches
A pinch of salt
A little potato starch
Oatmeal, fine-cut, 1 teaspoon
A pinch of herb salt or dried basil
Instructions
1.Cook the salmon skin-side down in a small amount of olive oil for 7-8 minutes until crispy. Before it finishes cooking, arrange the enoki mushrooms alongside it.
2. Remove the salmon, sprinkle the enoki with a little salt and potato starch, and press down with a spatula to release moisture and make them crispy.

3. Once the enoki are removed, add the oatmeal to the pan and stir-fry for 1-2 minutes until fragrant and crunchy. Adding a pinch of dried basil or similar herbs will enhance the aroma.

4. Plating
Spread the sauce near the center of the plate, layer the enoki, salmon, oatmeal, and pea sprouts (optional), add your side dishes, and it's ready.

Since we're at it, let's give
this dish a cool,
bistro-style name.

Authentic poêlé is
cooked with plenty of oil to make the skin crispy. This time, I used a small amount of oil for a diet-friendly version.
I named the Enoki Mushroom Croque Sauté
after the 'croque' (to crunch or bite) in dishes like Croque Monsieur. It sounds pretty cool, right?

Salade Folle literally
means 'crazy salad,' referring to a salad that breaks the mold of standard combinations, where the chef freely packs in delicious ingredients. In Japan, it's similar to what we call a 'chef's whim salad.'
The Japonaise dressing is
a secret recipe from the restaurant where I worked part-time in high school. It actually has a few more ingredients, but this simplified version is also delicious.
