① How to make Kaeshi
[Kaeshi] Can be stored at room temperature for 3 months
▽Ingredients▽
・Soy sauce: 100ml (or 500ml)
・Sugar: 30g (or 150ml)
▽How to make▽
Just put the sugar and soy sauce in a storage jar with a lid or a plastic bottle and leave it at room temperature for about a week! (Shake it occasionally to dissolve it faster. If you are in a hurry, dissolve it in a 50-degree water bath)

It can be used as soon as the sugar dissolves, but letting it sit for a week will result in a more matured flavor!
② How to make Mirin-zake
[Mirin-zake] Can be stored in the refrigerator for 1 month
▽Ingredients▽
・Hon-mirin: 200ml ・Junmai sake: 100ml
▽How to make▽
① Put mirin and sake in a pot and bring to a boil over medium heat
② Once boiling, turn to low heat and simmer until the sharp smell weakens
③ Once it has cooled down, put it in a plastic bottle or a storage jar with a lid to store
▽Points▽
The key to not losing the flavor is not to boil it too much!
③ How to make Amazu (Sweet Vinegar)
[Amazu] Can be stored at room temperature for 3 months
▽Ingredients▽
・Rice vinegar: 100ml ・Sugar: 70g
▽How to make▽
① Put rice vinegar in a pot and heat over medium heat
② Once boiling, turn off the heat and dissolve the sugar
③ Once it has cooled down, put it in a plastic bottle or a storage jar with a lid to store
▽Points▽
If you let the sharp smell of the vinegar evaporate before dissolving the sugar, it will finish with a gentle taste!
④ How to make Ama-miso (Sweet Miso)
[Ama-miso] Can be stored at room temperature for 3 months
▽Ingredients▽
・Miso: 100g
・Mirin-zake: 30ml
・Sugar: 20g
・Kaeshi: 1 teaspoon
▽Instructions▽
Put all ingredients in a pot and heat over low heat, stirring with a spatula to prevent burning, until it becomes a paste.
▽Tips▽
If you like, add 1 teaspoon of Shaoxing wine for a better aroma and a deeper flavor.
5. How to make Onion Vinegar
[Onion Vinegar] Can be stored in the refrigerator for 1 month
▽Ingredients▽
・Onion (finely chopped): 1/2 onion (approx. 100g)
・Apple cider vinegar: 200ml
▽Instructions▽
Place the ingredients in a wide-mouthed jar or similar container, cover, and let it sit in the refrigerator overnight. It can be used from the next day.
▽Tips▽
Replacing 1/3 of the apple cider vinegar with mirin will give it a milder taste.
