I lightly sterilized sashimi-grade yellowtail with vinegar and made a marinated bowl using a sauce of sake, mirin, and soy sauce.
Just by grating mountain yam and adding green onions and dashi, the yellowtail sashimi bowl instantly becomes luxurious.

Just hearing the name makes it feel like a bit of a feast.
But making it is actually surprisingly simple😁.
This time, I used sashimi-grade yellowtail🐟️.
First, put 1 tablespoon of vinegar and the fish in a bag to lightly sterilize it.
This is quite low-key, but it's important👍.
It's an adult thing, wanting to feel a little bit at ease😁.

Next, make the sauce.
2 tablespoons sake
2 tablespoons mirin
1.5 tablespoons soy sauce
Microwave this covered loosely with plastic wrap for 1 minute and 30 seconds.
Then, let it cool completely.
If you rush this part, the yellowtail🐟️ will be like, 'It's hot!💢😡!', so the cooling time is actually quite important👍.
Anyway, make sure it cools down thoroughly.
In the meantime, rinse the fish with water, pat it dry thoroughly with a paper towel, and then cut the fish🐟️.
Even though I've been insisting on no cutting boards or knives lately... using scissors for sashimi is a bit much... so I used a knife and cutting board here👨🍳.
Around this point, I start to look like someone who actually knows how to prepare fish👨🍳.
Even if I'm actually quite sloppy, it's amazing how it looks professional once it's in a bowl✨.

Grate plenty of mountain yam (jinenjo) over the rice.

Sprinkle with green onions.
Finally, pour the dashi over it, and there you go, it's done👨🍳✨.

It's just this much, but it looks really delicious😋.
The umami of the yellowtail, the creaminess of the mountain yam, and the aroma of the dashi.
This combination is almost like cheating✌️.
In both appearance and taste, it really becomes a proper 'rice bowl🐟️'.

In other words, if the ingredients are good, everything is good😁.

As a single-parent dad, I'm grateful for seafood bowls like this that are simple but satisfying for the kids, rather than elaborate dishes.
Plus, it has a destructive visual impact💥🎉.
It makes them think, 'I ate something good today😋,' and I can get away with being half-lazy😅.

I conversely wonder, 'Is this really okay?🤔',
but that doubt disappears as soon as the bowl is in front of me😁.
