When I looked at the ingredients of store-bought roux with that in mind, I saw that "fats and oils" were listed quite early on. Ingredient labels are listed in descending order of usage.
“I see. If there is this much oil in it, it makes sense that it feels heavy after eating.”
So, I started researching curry that doesn't use store-bought roux. I wrote about that process in this article.
