I made a spring-colored quiche today—simple, healthy, delicious, and elegant!
[Ingredients]
・4 eggs
・Frozen vegetables
・Bacon or sausage
・Soy milk or regular milk
・Salt & pepper
・Grated cheese (like parmesan)
・Mayonnaise
・Frozen puff pastry
・Melty cheese (for topping)


[Preparation]
① Sauté the ingredients (see photo top left). Prepare the rest as well.

② Mix everything in a bowl (before/after mixing shown below).


③ Get your baking dish, parchment paper, and frozen puff pastry ready.
Use a slightly large dish—the quiche will puff up while baking.
Thinner pastry bakes faster.
If you're using small aluminum molds, you can skip the puff pastry.

④ Line your dish with parchment paper, then add the puff pastry.
Crumple and unfold the parchment to make it easier to shape.
Leave the edges of the pastry a bit higher.

⑤ Pour the filling into the dish.

⑥ Top with melty cheese and bake at 200°C (about 390°F) for 30 minutes.
For mini quiches, a toaster oven works fine!
