Today I made a Taiwanese-style breakfast soup using soy milk and vinegar:

What is Xian Dou Jiang?

Xian Dou Jiang is a classic Taiwanese breakfast dish.
Warm, unsweetened soy milk is combined with vinegar, soy sauce, chili oil, and other seasonings, causing it to gently curdle into a silky, tofu-like texture.
It has a light tangy flavor with rich depth, and is typically topped with pickled mustard greens, dried shrimp, and fried dough sticks (youtiao).
It’s known as a healthy, comforting dish—perfect for warming up your body in the morning.

Ingredients


⚠️ Be sure to use unsweetened soy milk!
(Sweetened soy milk will NOT curdle properly.)

⚠️Basic ratio:
Unsweetened soy milk: 200 ml
Vinegar (rice vinegar, grain vinegar, black vinegar, etc.): 1–2 tbsp
Soy sauce or dashi (for flavor): 1–2 tsp



Instructions

Add vinegar and mentsuyu (or soy-based seasoning) to a bowl and set aside.

Heat the soy milk in the microwave (about 2 minutes).



⚠️ Soy milk can suddenly boil over, so don’t take your eyes off it!


(If the inside of the microwave starts to fog up, stop immediately!)

Slowly pour the hot soy milk into the bowl.

Do NOT stir—just let it sit and gently curdle.

I love vinegar, so I added a little extra when eating 💞

About My “Failures” 😅

I accidentally used sweetened soy milk…
(It looked like it was setting, so I didn’t realize at first!)

In the end, I drank everything anyway—
it had a rich, dessert-like texture, almost like a drinkable pudding 😋


Then I went out to buy unsweetened soy milk…

Unsweetened vs. Sweetened Soy Milk

The main difference is the ingredients and soybean concentration.
Unsweetened soy milk: Made from soybeans and water only, richer and better for cooking
Sweetened soy milk: Contains sugar and salt, easier to drink but not suitable for this recipe
For cooking and health-focused recipes, unsweetened is the way to go!
