super light Basque-style cheesecake

【Ingredients】

・150 g silken tofu
・300 g cream cheese
・30 g raw cane sugar
・2 eggs

【Instructions】
① Add all the ingredients to a bowl.

② Mix until smooth and creamy.

③ Line the cake pan with a sheet of kitchen paper dampened with water, then pour in the batter.

⚠️ A round cake pan about 15 cm (6 inches) in diameter works best!

④ Bake in the oven.
(As a guideline: 230°C / 450°F for about 30 minutes.)

⑤ Once the cake has cooled to room temperature, refrigerate it for at least 6 hours to fully set before removing it from the pan.

【A Little Note】

It looks like a Basque-style cheesecake, but it actually turned out to be a super light and refreshing cheesecake! ❗️

There was such a big difference between how it looked and how it tasted—it was such a strange feeling. I’m not even sure how to describe it! 😅

It actually made me crave a rich, indulgent Basque cheesecake〰️‼️

……………………………………………………………

The extra batter that wouldn’t fit in the pan, so I baked it separately.

(AI-generated information)

Ingredients
(for one 15 cm / 6-inch round cake pan)
Cream cheese: 400 g, at room temperature
Granulated sugar: 100 g
Whole eggs: 3, at room temperature
Heavy cream: 200 ml
Cake flour: 10 g
Lemon juice: 10 g

Instructions
① Beat the cream cheese until smooth. Add the sugar, then gradually mix in the eggs in 3–4 additions. Next, mix in the cake flour, lemon juice, and heavy cream, in that order.
② Strain the batter and pour it into the prepared cake pan. Bake at 250°C / 480°F for about 30 minutes, until the surface is deeply browned, almost black.

🌟 Good to Know 🌟

・How to tell when it’s done: The top should be deeply browned, almost burnt, ranging from dark brown to nearly black.

・The key to preventing the cake from falling apart: Make sure to refrigerate it for at least 6 hours to fully set before removing it from the pan.
