Kinpira Gobo and Crunchy Lotus Root Kinpira
This is the classic "Gobo and Carrot Kinpira" and the crunchy, chewy
"Lotus Root Kinpira."
Both are rich in dietary fiber and low in calories.
Since chewing them well provides a sense of fullness, they are also
recommended for those on a diet.
◾️Kinpira Gobo
【Ingredients】 (Easy-to-make amount)
・Burdock root (with soil)... 1 bag
・Carrot... 1
・Light soy sauce... 3 tbsp
・Kibi sugar (raw sugar)... 1 1/2 tbsp
・Ichimi chili pepper... to taste (optional)
・Rice vinegar... 1 tsp (for color retention)
・Sesame oil... as needed
【Instructions】
1. Preparation
・Wash the burdock root thoroughly under running water to remove soil, and scrape off the skin with the back of a knife.
・Cut into approximately 8cm lengths, then julienne them so they retain some texture.
・Boil a large pot of water, add the rice vinegar, and quickly blanch the burdock root.
・Remove the stem of the carrot, peel it, cut it in half lengthwise, then cut it in half again
and julienne it.
2. Stir-frying
・Heat sesame oil in a frying pan and stir-fry the carrots over low heat.
・When the carrots become slightly translucent, add the burdock root.
・Add the kibi sugar and light soy sauce, toss everything together, and finish with a kick of
ichimi chili pepper.
・Once the flavors have blended, it is ready.
◾️Lotus Root Kinpira
【Ingredients】 (Easy-to-make amount)
・Lotus root... approx. 20cm (two 10cm pieces)
・Light soy sauce... 3 tbsp
・Kibi sugar... 1 1/2 tbsp
・Ichimi chili pepper... to taste (optional)
・Toasted sesame seeds... a little
・Rice vinegar... 1 tsp (for color retention)
・Sesame oil... as needed
【Instructions】
1. Preparation
・Wash the lotus root, peel it, cut it into quarters, and slice into 3mm thick ginkgo-leaf shapes.
・Boil a large pot of water, add the rice vinegar, and quickly blanch the lotus root.
2. Stir-frying
・Heat sesame oil in a frying pan and stir-fry the lotus root over low heat.
・When it becomes translucent, add the kibi sugar and light soy sauce, and toss everything together.
・Add the ichimi chili pepper to adjust the flavor, and it is ready.
3. Plating
・Serve on a plate together with the "Kinpira Gobo."
・Sprinkle toasted sesame seeds over the "Lotus Root Kinpira" as a finishing touch, and it's done!

【Quick Tips】
・If you cut both the burdock root and lotus root a little thicker, they will retain a firm texture,
increasing satisfaction!
・Both are convenient to make in advance for when you want one more side dish.
