This time, I'm bringing you two surprising recipes that respect authentic flavors while evolving them into healthier versions. They are creative dishes with maximum satisfaction that will make you wonder, "Wait, is this really okay to eat while on a diet?!" (lol)
The first dish is "Taiwanese-Style Spicy Glass Noodle Stir-fry." The glass noodles soak up the flavor-packed soup, spreading a spicy happiness with every bite. It's also loaded with vegetables, making it incredibly satisfying!
The second star of the show is "Salted Chicken (Yanshuiji) Shirataki Mixed Noodles." Surprisingly, it achieves a mere 150 kcal despite being so voluminous. It's a new type of healthy noodle dish that I want you to mix up vigorously and enjoy during the hot season.

Taiwanese-Style Spicy Glass Noodle Stir-fry
With the crunchy texture of king oyster mushrooms and bamboo shoots, combined with the enchanting aroma of five-spice powder and star anise, your kitchen will instantly transform into a Taiwanese night market. Once you take a bite, you won't be able to stop using your chopsticks! It's addictively delicious!
Taiwanese name:
台式香辣炒冬粉
(Taishi Xiangla Chao Dongfen)
Calories: approx. 340 kcal
Protein: approx. 12 g
Fat: approx. 12 g
Carbohydrates: approx. 45 g

Ingredients (1 serving)
Dried glass noodles: 40g
Sliced pork: 40g, cut into bite-sized pieces
Onion: 1/4, thinly sliced
Bok choy: 20g, cut into thirds
Carrot: 15g, thinly sliced
King oyster mushroom: 50g, cut into strips
Boiled bamboo shoots: 20g, thinly sliced
Garlic: 1 clove, minced
Ginger: 1 piece, minced
Sesame oil: 1 tsp
Water: 300ml
Seasonings
Soy sauce: 1 tbsp
Star anise: 1 piece
Sake: 1 tsp
Mirin: 1 tsp
Dashida: 1/2 tsp
Doubanjiang (spicy bean paste): 2/3 tsp
Five-spice powder: 1 dash
Instructions
1. Heat sesame oil, garlic, and ginger in a frying pan. Once fragrant, stir-fry the pork.
2. Once the meat changes color, add the onion, king oyster mushroom, bamboo shoots, carrot, and seasonings, and continue to stir-fry.
3. Add water and simmer over low heat for 3 minutes.
4. Add the dried glass noodles and stir-fry for 2-3 minutes while they absorb the soup until the liquid is gone. Add the bok choy just before finishing, stir-fry briefly, and it's done.

Salted Chicken Shirataki Mixed Noodles

A refreshing and light creative mixed noodle dish that combines the popular street food menu item, Salted Chicken (Yanshuiji), with shirataki noodles. Despite being low-calorie at 150kcal, it is a very satisfying dish packed with vegetables and seasoned with pepper and Sichuan peppercorns.

鹽水雞 蒟蒻拌麵 (Yanshuiji Konjac Mixed Noodles)
Calories: approx. 150kcal
Protein: approx. 15g
Fat: approx. 2.5 - 3g
Carbohydrates: 9g
Dietary fiber: approx. 8 - 9g
Ingredients (1 serving)
Shirataki: 150-200g
Chicken: 1 chicken tenderloin
Vegetables: Your choice, about 150-200g
Broccoli, new onion, cucumber, lettuce, red turnip, bell pepper, cherry tomatoes, baby corn, boiled bamboo shoots, etc.
Seasoning Sauce
Salt: 1/2 tsp
Grated garlic: 1/2 tsp
White pepper: 1/3 - 1/4 tsp
Black pepper: 1/4 tsp
Sichuan peppercorn: 1/4 tsp
Five-spice powder: 1 dash
Sesame oil: 1/2 tsp
Chicken bouillon powder: 1/2 tsp
Minced green onion (if available): 1 tsp
Cold water: 80ml
Finally
Lemon juice: 1/2 tsp
Instructions
1. Boil water in a pot and cook the chicken tenderloin over low heat. Remove from the water, let it cool slightly until it's cool enough to touch, then cut into bite-sized pieces.
2. Boil the shirataki for about 3 minutes. If there are other vegetables you want to cook (like broccoli), boil them together, then drain in a colander and let cool.
3. Put all the above seasonings into a large bowl, mix well into a paste, and add the well-chilledcold water.
4. Add the drained shirataki, the cut boiled chicken, and the shredded vegetables (150g) into the bowl all at once.
5. Mix vigorously while lightly pressing the ingredients against the bottom of the bowl to soften the vegetables slightly, then plate, drizzle with lemon juice, and it's ready.
