It's cold outside, but inside, let's pamper ourselves to the fullest with warm food and a cold drink.
Tonight, I'm sharing my 5 proud dishes that go perfectly with both beer and shochu.
Let's relax and start preparing things 'tegetege' (in a laid-back way).
Octopus with Scallion Salt and Pepper

──Decided in seconds! A harmony of numbing deliciousness and the scent of the sea──
First, it's a race against time. There's nothing better than this when you want to start your 'dareyame' (evening drink) as soon as you stand in the kitchen. My style is to shake on the black pepper like there's no tomorrow!
📝 Ingredients
Boiled octopus … 150g–200g
Chopped green onions … Plenty
Chicken bouillon powder … 1 tsp
Sesame oil … 1 tbsp
Garlic (tube) … 2–3 cm
Black pepper … As much as you like (more is better)
🍳 How to make
Slice the boiled octopus a little thinly so the flavors coat it easily.
In a bowl, mix the chicken bouillon powder, sesame oil, garlic, and green onions.
Add the octopus, toss it with a generous amount of black pepper, and it's done!

The chewy texture of the octopus, the rich depth of the sesame oil, and the sharp kick of the black pepper all come together—this is truly a dish made for washing down with beer!
Every time you chew, the scent of the green onions wafts through your nose; it's incredibly delicious.
A Golden Bite! Melt-in-your-mouth Egg Yolk Wrapped in Seaweed

──Rich and melty. Golden happiness that bursts in your mouth──
An egg yolk nurtured overnight is like a jewel.
The moment the scent of the sea and the rich depth mix in your mouth, you'll feel the fatigue of the day disappear somewhere.
📝 Ingredients
Egg yolks ... 2-3
Soy sauce, mirin ... 1:1 ratio
Freshly cooked rice ... 1 bowl
Nori (hand-roll size) ... 4 sheets or more
Bonito flakes ... as needed
Green onions (chopped) ... a little
Pickled daikon radish ... to taste
🍳 How to make
Mix soy sauce and mirin in a container, and gently add the egg yolks. Let them sit in the refrigerator for 3 hours to overnight.
Place a bite-sized portion of rice on a sheet of nori, and sprinkle bonito flakes on top.
Place the marinated golden egg yolk on top of the rice.
Sprinkle with green onions and it's done. Wrap it up with the nori and enjoy.

The rich umami of the sticky egg yolk is followed by the aroma of crispy nori and the flavor of bonito flakes. The happiness of chasing that golden sea melting in your mouth with a cold beer is simply irresistible.
Shrimp and Squid Tentacle Chili

──Plump and crunchy! Blissful texture coated in sweet and spicy sauce──
The plumpness of the shrimp, the crunchiness of the tentacles, and the fluffiness of the egg.
The three textures layer together, making it impossible to stop using your chopsticks.
It's a flavor kids will love, but for adults, the right way to finish it is with a spicy kick of chili oil.
📝 Ingredients
Frozen shrimp ... 150g
Squid tentacles ... 150g
Eggs ... 2
Long green onion ... 1/2 stalk
Ginger, garlic ... 2cm of each from a tube
[Combined seasoning] Ketchup (4 tbsp), sugar (2 tsp), chicken bouillon powder (1 tsp), water (100ml)
🍳 Instructions
Wash the shrimp and squid tentacles with sake and potato starch, then lightly coat with potato starch.
Quickly scramble the eggs in a frying pan and remove them once cooked.
In the same pan, stir-fry the aromatics, and once fragrant, add the shrimp and tentacles.
Once cooked through, add the [combined seasoning], bring to a boil, and return the eggs to the pan.
Plate the dish, and for adults, drizzle with chili oil to finish.

The bouncy texture of the shrimp and the chewiness of the tentacles are gently complemented by the creamy, soft eggs. Stuffing your cheeks with this savory, sweet-and-spicy sauce makes it hard to stop drinking and eating rice.
Miso-Grilled Parent Chicken

──Juices that overflow with every chew! The temptation of savory miso──
This is true Kagoshima 'dareyame'! The robust chewiness of the parent chicken combined with the sweet miso is a flavor you won't forget once you've tried it. The aroma the moment you open the oven door is enough to make you want another drink.
📝 Ingredients
Parent chicken thigh meat ... 250g–300g
Miso ... 2 tbsp
Sugar ... 2 tbsp
Sake ... 1 tbsp
Light soy sauce ... 1 tsp
Mirin ... 1 tbsp
🍳 Instructions
Cut the parent chicken thigh meat into bite-sized pieces and place in a bowl.
Add all the seasonings and rub them in well.
Let it sit for at least 15 minutes to allow the flavors to soak in.
Bake in an oven (200°C) for 15 to 20 minutes until nicely browned and fragrant.

The powerful, chewy texture unique to parent chicken releases a burst of meat juices and sweet miso umami with every bite. The aroma of the slightly charred miso wafts through your nose, making it impossible to stop drinking.
Melty Fondue with BRUNO

──A sea of melted cheese. Dive in with colorful ingredients──
Finish off with a festive hot plate. Just watching the Camembert cheese melt is enough to warm your heart. Dip as much as you like—vegetables, shrimp, whatever you want—and enjoy the fun with everyone.
📝 Ingredients
Camembert cheese ... 1 piece
Shrimp (pre-boiled) ... as much as you like
Broccoli (pre-boiled) ... 1/2 head
Wiener sausages ... 1 pack
Cherry tomatoes ... 6 to 8 pieces
Olive oil, Magic Salt ... appropriate amounts each
🍳 Instructions
Make a cut on the top surface of the Camembert cheese.
Place the cheese in the center of the hot plate and arrange the ingredients around it.
Drizzle olive oil and sprinkle Magic Salt over everything.
Cover and heat, and once the cheese is melted and gooey, it's ready.

The rich aroma of the cheese the moment you lift the lid and the sight of it stretching long and gooey is spectacular. Coating the piping hot shrimp and broccoli in plenty of rich cheese and washing it down with chilled white wine... it's the best!
