Ingredients

Serves 4
・500g ground meat (beef and pork blend)
・1 carrot
・1/2 onion
・1 pack shimeji mushrooms
・2 tbsp olive oil
・30g store-bought taco seasoning
・200ml water
・1 tsp soy sauce
・4 tomatoes (or 5 if using midi tomatoes)
・1 head of lettuce
・4 boiled eggs
・4 servings of warm rice (4 bowls)

※Use extra virgin olive oil.
※For those on a gluten-free diet: please use gluten-free soy sauce. Also, check the ingredients of the taco seasoning.


Instructions

1. Finely chop the carrot and onion. Remove the stems from the shimeji mushrooms, break them apart, and chop finely. Remove the seeds from the tomatoes and cut into 1cm cubes. Shred the lettuce. Thinly slice the boiled eggs.

2. Add olive oil to a pan and heat it up. Add the carrot, onion, and shimeji mushrooms from step 1 and sauté over high heat for 1 minute.
