Today's marinated tuna.
It's my usual marinated tuna, but when I ate it, I realized it was full of tough, stringy bits. (Oh, this isn't albacore...) I realized. People who love sashimi might actually prefer this, but I'm not a big fan of raw fish. I don't really like eating sashimi that has a chewy texture.
I like albacore because it gets soft and melty at room temperature. I love tekka-maki (tuna rolls) because the tuna is thin and doesn't feel chewy, but actually, I don't like fatty tuna either. I ate it with a huge amount of wasabi.

I heard that the white streaks in tuna are fat and that they soften when cooked, so I tried simmering it with egg. Oh, this is surprisingly good. The marinated tuna soaked in dashi soy sauce simmered with egg was quite delicious.
