[My Family Recipe 25] Custard Pudding
Spring break is almost over, and it's a rainy day. Since we suddenly had some free time at home, I made sweets with my second son, who is about to start elementary school. It's easy to make and uses ingredients we always have at home... That's it, let's make pudding!
How to make custard pudding (for four 100ml molds)
2 eggs
40g sugar
300ml milk
A little vanilla essence
<Caramel sauce>
A: 30g sugar
A: 1 tablespoon water
1 tablespoon boiling water
Make the caramel sauce. Mix A in a pot. Heat over medium heat, and while not stirring but shaking the pot, heat it. When the whole thing turns amber, turn off the heat and add the boiling water (be careful as it will splash). Immediately pour equal amounts into the molds.
Make the pudding batter. Heat the milk in a pot, and when bubbles appear around the edges, turn off the heat. Crack the eggs into a bowl, add sugar, and mix. Gradually add the warmed milk.
Preheat the oven. Add vanilla essence to step 2 and strain through a fine-mesh sieve. Gently pour into the molds. If you have time, pop any bubbles on the surface with a bamboo skewer.
Place on an oven tray and fill with hot water up to about halfway up the pudding molds. Bake in a 160°C oven for 30 to 40 minutes.
Insert a bamboo skewer, and if no raw batter sticks to it, it's done. Let it cool, then chill in the refrigerator. Run a bamboo skewer around the edge of the mold, then place a plate on top and shake it upside down to remove.

The family loved it, and I was very satisfied.
Pudding has been a favorite of Usako's since she was a child. This time, I made a double batch, which is 8 servings. However, with a family of five, that's not enough... Like a responsible adult, I told the kids, "You can have two each, one for today and one for tomorrow," but I really should have just made 10. I can manage the fridge space, so next time I'll make 2.5 times the amount!
Homemade snacks are wonderful. I have the kids help with cooking, but sweets feel a little more special.
It was a sweet time at home for both parent and child.
