How to make pumpkin potage
Peel 1/3 of a pumpkin, 1/2 a carrot, and 1 onion, then cut them into appropriate sizes.
Place them in a heavy-bottomed pot with enough water to cover them and 3 bouillon cubes, then simmer.
Once the ingredients are soft (about 10 minutes over medium heat), turn off the heat and let it cool slightly.
Blend until smooth using a mixer or hand blender.
Thin it out with an appropriate amount of milk or soy milk (and about half a carton of heavy cream, if you have it).
Adjust the seasoning with salt, sprinkle with parsley, and it's ready.

We don't have a custom of celebrating Halloween in our home, but I tend to make pumpkin dishes, or if I have time, I bake apple pies shaped like pumpkin ghosts. The easiest one is this potage. It's one of the recipes my mother taught me when I was a child.
Besides pumpkin, you can freely arrange it with potatoes, sweet potatoes, mushrooms, fava beans, etc. Combine with onion or white leek, simmer in bouillon or dashi, blend with a mixer, and thin with milk, soy milk, almond milk, etc., to make a potage soup that is also perfect for baby food. If you want more richness, add heavy cream, butter, or olive oil at the end.
It's delicious hot, but also great served cold during the warmer months. It can also be frozen for storage.
