Water... 1 to 2 tablespoons (to adjust consistency)

How to make
In a small bowl or storage container, combine the shio koji, vinegar, and honey, and mix well.
Gradually add the olive oil while mixing to emulsify.
Sprinkle with black pepper and adjust to your preferred consistency with water.
Taste it, and if you want more mellowness, you can add a little more honey.
