I'd like to introduce my family's hotcake recipe.
The kind you'd get at those Showa-era cafes—
Crispy on the outside.
Fluffy on the inside.
These are hotcakes with a subtly sweet, toasted aroma.
Even without baking powder,
you can recreate them perfectly just using the power of eggs and the right cooking method.
This time,
I've served them with crispy bacon and scrambled eggs,
for a bit of an American diner-style breakfast.

☕️Showa-era Cafe Style Triple Stack Hotcakes
Ingredients (for 3 pancakes)
❶ Cake flour 150g
❷ Sugar 30g
❸ Eggs 2
(Separate into yolks and whites)
❹ Maple syrup 1 tbsp
❺ Milk 100ml
❻ Butter as needed
❼ Salad oil a small amount

Instructions
❶ Whip the egg whites
Whip the egg whites in a clean bowl until stiff peaks form.
*This is the key to a fluffy texture.

❷ Make the egg yolk batter
In a separate bowl, combine the egg yolks, sugar, and maple syrup and mix.
Add the milk,
sift in the cake flour, and mix.

❸ Add the meringue
Add the meringue in three batches,
and fold it in with a rubber spatula.
*It is okay if some white streaks remain.

❹ Baking
Heat a frying pan over medium heat.
Lightly grease with oil,
and wipe it off lightly with a paper towel.
Pour in the batter,
and bake over low to medium heat for about 3 minutes.
Flip when bubbles appear on the surface.
Bake the other side for about 1 minute and 30 seconds.
Bake 3 pancakes in the same way.

🥓 Crispy Bacon
Ingredients
❶ Bacon 4-6 slices
Instructions
Arrange in a frying pan,
and cook slowly over low to medium heat.
Flip once the fat renders out,
and it is ready once both sides are crispy.

🍳 Scrambled Eggs
Ingredients
1. Eggs: 2
2. Milk: 1 tablespoon
3. Butter: 10g
4. Salt and pepper: a pinch
Instructions
Add milk to the eggs and mix.
Pour into a frying pan with melted butter,
and cook slowly over low heat while stirring until soft-scrambled.
Finally, season with salt and pepper.

🍯 Finishing touches
Stack three pancakes.
Place butter on top,
and drizzle generously with maple syrup.
When you cut into them with a knife,
a puff of steam rises from within.
It is a nostalgic breakfast
that reminds me of a Showa-era coffee shop. ☕️
