A new combination of soy sauce and cola. The scent of fermentation spreads: [Craft Cola of Soy Sauce from the Brewing Town]
Good evening! This is Koreeda from The SUZUTIMES editorial department.
The product I would like to introduce this time is [Craft Cola of Soy Sauce from the Brewing Town]. It is the latest item in the impressive 'Brewing Town' series, which focuses on a town called Settaya in Nagaoka City, Niigata Prefecture.
The town of fermentation and brewing, 'Settaya'

Settaya is a place where the history of fermentation and brewing culture is even more deeply rooted than in the rest of Nagaoka.
It is said that it flourished as a key transportation hub during the Edo period, and because of its convenient location and abundance of resources like high-quality water and rice, breweries gathered there.
It is a place whose historical value is recognized as a site that miraculously escaped repeated disasters and the ravages of war, preserving its appearance from that time. There are still breweries continuing production there, and it is a place that has supported Nagaoka's traditions and food culture for a long time.
The 'Brewing Town' series is a product line that collaborates with each of the six breweries currently existing in Settaya, delivering the traditional fermentation and brewing culture as a slightly new way to enjoy it.
Main ingredient: Koshino Murasaki soy sauce

When it comes to soy sauce in Niigata... there is no one who doesn't know 'Koshino Murasaki'. This super-established soy sauce brewery, founded in the second year of the Tenpo era, was born in the brewing town of Settaya in Nagaoka.
The Jizo statue that has become their icon (Koshi no Jizo) is also modeled after the 'Tsuji Jizo' statue located in Settaya.
Speaking of Koshino Murasaki soy sauce, there is the dashi soy sauce called 'Tokusen Katsuo Dashi Koshino Murasaki'. This soy sauce, which has been loved for over 40 years, is characterized by its elegant and rich umami, scented with carefully selected domestic bonito flakes.

This product is a cola syrup made using soy sauce from Koshino Murasaki that is crafted with extra time and effort.
It is finished with a flavor that makes the most of the unique umami of soy sauce, combined with the aroma of spices and the sharpness of ginger.
Product: Craft Cola of Soy Sauce from the Brewing Town

1. Uses 'Naturally Brewed Double-Fermented Whole Soybeans'
This is soy sauce brewed using whole soybeans from Niigata Prefecture and domestic wheat as the main ingredients. 'Double-fermented' (saishikomi) is a manufacturing method where soy sauce is used instead of the salt water that would normally be used in the soy sauce brewing process.

Because it is brewed using soy sauce that has already been brewed once, it takes twice as long and uses twice as many raw materials to make. In return, it results in a special soy sauce characterized by a deep color, a mellow flavor, and a rich body, with a profound umami unique to the double-fermentation process.
2. Enjoying the umami of soy sauce
When you hear 'Soy Sauce Craft Cola,' you might think it tastes like soy sauce... but this product is not salty.
When you open the bottle cap, you can faintly sense a somewhat nostalgic and familiar aroma amidst the spicy scent.
When you drink it, you should be able to feel the presence of the soy sauce a little more. You can enjoy a Japanese-style flavor that has a solid umami within the sweetness, much like the sauce for Mitarashi dango.
The reason you can enjoy the flavor of soy sauce without it being too heavy is thanks to the aroma of the spices and ginger. It is blended to bring out the best of both.
<Basic Serving Suggestions>
We recommend mixing one part syrup with four parts chilled sparkling water. It is also delicious when mixed with soy milk or regular milk.
It is also recommended as a syrup for shaved ice or as a topping for vanilla ice cream.
If you use it in simmered dishes like curry, it becomes a special secret ingredient that adds depth to the dish with its complex flavor.
