This Year's Beaujolais Nouveau and Pairings | I Made Some So-Called Snacks
How the wine turned out
True to the rumors that the sunny weather this year helped the grapes ripen smoothly, it was a very delicious wine with rich fruitiness and a deep color.
I feel like Beaujolais Nouveau, which is known for being light and acidic, has been taking on a richer flavor profile more like wines from further south over the last few years.
It seems that due to recent global warming, Burgundy grapes are more prone to higher sugar content, and because the grapes are more mature at harvest, the alcohol content is slightly higher and the fruitiness is stronger than before; while that makes it delicious in its own way, it is still a bit concerning.
I made three snacks
1. Persimmon and Prosciutto Salad

The flavor of the persimmon matches the fruitiness of the wine. While red wine might pair better without the arugula, I like it in there.
For the cottage cheese, I use milk that I've heated and separated by adding vinegar. It's milky and delicious.
2. Chicken Liver Terrine

The ratio of chicken liver to thigh is 3:1; adding the thigh seems to increase the umami and texture.
It's a dish that's easier to make than it looks: just sauté each ingredient, put them in a food processor, and chill in a mold. Surprisingly, the seasonings are sake, soy sauce, and mirin.
It's guaranteed to go well with red wine.
3. Spanish Omelet

Egg dishes go well with light red wines.
I used two types of cheese (diced red cheddar inside, and plenty of grated Parmigiano-Reggiano sprinkled on top after baking) and scattered dill, which also pairs well with eggs.
Since it has potatoes in it, it's quite filling.
Bonus Salad
This is a green salad topped with several types of leafy greens, dried nuts, and kiwi fruit.
I like green salads, which are usually better suited for white wine, because adding nuts, raisins, and the sweetness of fruit makes them work with red wine too.
Stemless Glasses
I've been drinking wine out of stemless glasses lately.
A stemless glass is a glass without a 'stem' (the leg).
They are very easy to use because they are stable, hard to knock over, durable, and easy to store.
Since they don't affect the spread of the aroma or the ease of drinking, I can no longer go back to glasses with stems.
It was very delicious.
