Stir-fried Pork and Eggplant with Miso
Good evening☺️
I was in the mood for a pork stir-fry, so for dinner, I made stir-fried pork with miso along with some eggplant I had in the fridge.
I've been thinking lately that a lot of the eggplants available have thick skins and feel quite dense, but I realized that's actually a characteristic of autumn eggplants🧐
Since they don't fall apart easily when stir-fried or simmered, I cut them a bit smaller than usual.
I stir-fried the eggplant in plenty of oil until seared, then set it aside, and stir-fried the pork in a freshly oiled pan. Finally, I returned the eggplant to the pan, added the seasonings, and stir-fried everything together to finish.
A carefully prepared miso stir-fry is a satisfying dish.
I enjoyed the process of making it, and as someone who loves to cook, I felt fulfilled☺️
It's a common dish, but I think there's something truly precious about simple, everyday food that tastes good—really good✨
I've been living alone for a long time now and can make all sorts of things, but back when I first started, I once made nikujaga that was so bad I ended up eating it while crying😂
↑ It wasn't so much that it was bad enough to cry over, but rather that between the loneliness of living alone and the tension of starting a new life, the fact that even my dinner didn't taste good just made me feel so down😢, and everything just came pouring out (lol)
Even for home-cooked meals, I don't take it for granted that they taste good, and above all, it's a blessing to have delicious food to eat every day✨
