What to eat on days when you have no appetite | A gentle recipe for thickened egg drop udon [Registered Dietitian]
Hello, I'm Sawako, a registered dietitian.
On days when you have no appetite, or
days when you feel a bit under the weather.
Sometimes, the more you think "I have to eat something,"
the less you know what to make.
At times like that,
this is what I often make:egg drop udon.
Frozen udon, noodle soup base, and an egg.
I add a little thickness with potato starch dissolved in water,
and add some ginger juice.
Just by adding thickness, the texture
becomes surprisingly smooth.
The sensation as it passes through your throat and stomach becomes gentle,
reducing the burden of "eating" itself.
When you are not feeling your best,
I feel this sensation is very important.
Ingredients (for 1 person)

・Frozen udon (Katokichi)……1 serving
・Noodle soup base (3x concentrate)……Appropriate amount (dilute according to package instructions)
・Egg……1
・Potato starch……1 tbsp
・Water……1 tbsp
・Kaiware radish sprouts……Appropriate amount
・Ginger juice……A little
Instructions
Boil the frozen udon in a separate pot
Boil the frozen udon in plenty of water according to the package instructions, then drain.Make the broth
Put water and noodle soup base in a separate pot, and add the ginger juice here as well, then heat.Add the potato starch slurry
Just before it boils, lower the heat, pour in the potato starch slurry, and stir gently to thicken.Add the egg
Once the thickness is stable, gently pour in the beaten egg.
Turn off the heat once the egg has set softly.Finishing touches
Place the udon in a bowl and pour the broth over it.
Garnish with kaiware radish sprouts and it's done.

Udon is easy to digest and is suitable for
replenishing energy when you are not feeling well.
Supplement protein with the egg,
and reduce irritation to the digestive tract with the thickened potato starch.
By adding the ginger to the broth from the start
rather than as a finishing touch, the flavor isn't sharp,
and it gently warms you from the inside out.
Even if you don't think,
"I need to have perfect nutritional balance,"
choosing to eat something warm without forcing yourself
is meaningful enough on its own.
It's okay if this is all you have today.
I feel that being able to have days where you think that
is also important for continuing to eat well.

💡If you are concerned about salt intake,
you can adjust it by slightly diluting the noodle soup base, or by not drinking all of the broth.
