[Low-Carb] Butter Chicken Curry
Today I will introduce how to make a delicious and easy
"Butter Chicken Curry" that I have been hooked on recently.
Butter chicken curry is a very popular
menu item in Canada, and even if it's not a specialty curry restaurant,
you can find it in the deli section of supermarkets,
and there are also many ready-to-use bottled sauces
sold by various manufacturers.
However, since it sometimes contains ingredients I can't eat due to allergies,
this is the recipe I finally arrived at after starting to make it at home.
Butter Chicken
<Ingredients>
・Chicken thigh 250g
☆Unsweetened yogurt 100g
☆Grated ginger 1 clove worth
☆Grated garlic 1 clove worth
☆Curry powder 1/2 tablespoon
☆Salt and pepper, a little
・Onion 1/2
・Butter 30g
・Canned diced tomatoes 1 can (400g)
★Curry powder 1 tablespoon
★Lakanto (or sugar) 1 tablespoon
★Salt 1/3 teaspoon
・Heavy cream 50cc
◆Chili peppers, cayenne pepper, etc. to taste
<Instructions>
・Cut the chicken thigh into your preferred size, add all the ☆ seasonings, and marinate for 30 minutes to several hours.
・Finely chop the onion and sauté in butter, being careful not to burn it.
・When the onion looks good, add the canned tomatoes and bring to a boil.
・Once boiling, add all the marinated chicken along with the yogurt sauce, and add the ★ ingredients.
・Simmer on low to medium heat for about 15 to 20 minutes, being careful not to burn it.
・Finally, add the heavy cream, bring to a boil, and it's done.
For the curry powder, I use
McCORMICK's Curry Powder, which is a pre-blended spice mix.
The curry powder and yogurt overpower the red of the tomatoes,
resulting in a finish that is quite whitish and yellow
rather than orange.
With the ingredients above, it is not spicy at all, so
add spiciness with chili peppers or cayenne pepper.
I like that it's easy to make because it's a type of dish where you simmer the chicken
without sautéing it first.
Since I started making it with this recipe, my family said,
"We don't need to go to a restaurant anymore, this is fine!"
and I am very satisfied.
It has completely become a staple flavor in our home.
