[Sesame Sauce Chicken]
■ Ingredients
Chicken thigh: 300g
Potato starch: a pinch
Green onion: to taste
<Sesame sauce ingredients>
Ground sesame seeds: 2 tbsp
Toasted sesame seeds: 1 tbsp
Soy sauce: 1 tbsp
Vinegar: 1 tbsp
Sugar: 1 tbsp
Mayonnaise: 1 tsp
Miso: 1 tsp
Sesame oil: 1/2 tsp
■ Instructions
1. Pat the chicken thighs dry with a paper towel and cut into bite-sized pieces.
2. Coat the chicken with potato starch.
3. Place all the <sesame sauce ingredients> in a small bowl and mix well.
4. Heat oil in a frying pan, cook the chicken from step 2 skin-side down, and ensure it is cooked through.
5. Plate it, drizzle with the sauce from step 3, and sprinkle with green onions to finish!

Coating with potato starch makes the surface crispy and fragrant.
The sesame sauce can be made in advance! It also goes well with cold shabu-shabu and salads.
You can use chicken breast, but chicken thighs are juicier and recommended.
