This time, I'll introduce [Egg Pouches] that you can make with ingredients you have at home.
Lock the umami of the fried tofu into the egg,
and just simmer it in a sweet and savory sauce based on mentsuyu.
Perfect as a side dish for rice or as a snack with drinks.

[Egg Pouches]
■ Ingredients (for 2 people)
Fried tofu (abura-age): 1 pack (contains 2 pieces)
Eggs: 4
<Sauce>
Water: 150ml
Mentsuyu (2x concentrate): 2 tbsp
Soy sauce: 1 tbsp
Sake: 1 tsp
Mirin: 2 tsp
Sugar: 1 tbsp
■ How to make
1. Cut the fried tofu in half and open it into a pouch shape (you can also remove excess oil with a paper towel).
2. Gently crack one egg into each pouch,and seal the opening securely with a toothpick.
3. Put all the sauce ingredients into a pot and heat over medium heat.
4. Arrange the fried tofu pouches in the pot,and simmer over medium heat for 7 minutes (no lid needed).
5. Serve on a plate with the toothpicks still in, and it's done!
※ If you prefer soft-boiled, 6 minutes or so is also fine!
■ Cooking tips
Fried tofu isfragile, so open it into a pouch gently.
When adding the egg,open the pouch wide before pouring it in.
If the heat is too high, the egg will get too firm, sokeeping it at medium heat is best
Since the flavor is rich,simmering it well makes it go great with rice too!
