🦐 Steamed to Perfection! These [Shrimp and Shiso Leaf Fresh Spring Rolls] Are Addictive

Packed tight with shiso leaves, shrimp, green onions, and shiitake mushrooms,
and then pan-steamed with sesame oil...

[Shrimp and Shiso Leaf Fresh Spring Rolls]
■ Ingredients (makes about 5 rolls)
Boiled shrimp: 2 packs (about 20 shrimp)
Green onion: 1/2 stalk
Shiitake mushrooms: 4
Shiso leaves: about 10
Rice paper: 5 sheets
Water: 150cc
[Filling Seasonings]
Sake: 2 tsp
Ginger: 3cm (tube)
Miso: 2 tsp
Aromatic seasoning paste: 1/2 tsp (or chicken bouillon powder)
[Other]
Shredded green onion (optional)
Sesame seeds: an appropriate amount
■ Instructions
1. Finely chop the shrimp (half the amount), green onions, and shiitake mushrooms
→ Place in a bowl and mix with the [Filling Seasonings]
2. Lightly rehydrate the rice paper with water,
place 2 shiso leaves → filling → 2 shrimp on top, and wrap
3. Line a frying pan with crumpled parchment paper,
add sesame oil → arrange the rolls from step 2
4. Pour 150cc of water between the frying pan and the parchment paper, cover with a lid,
and steam over medium heat for 5 minutes to finish!
■ Cooking Tips
Don't over-rehydrate the rice paper; it's easier to roll when it's just "moist"
Knead the filling thoroughly to concentrate the flavor!
Sesame oil adds fragrance, and steaming makes them juicy
■ The Secret to the Flavor
With the umami of miso and aromatic paste,
the inside is fluffy, and the outside is chewy and fragrant.
