2027 Beans Shop <In the Middle of a Dream> Episode 15: Work Before Opening

Two weeks later, the official estimate arrived from Mr. Sawaki. It seems Mr. Tanigawa placed the order officially. Of course, we couldn't add the terrace, but I thought it was sufficient for a mini-hotel with a bed & breakfast and a cafe.
The total amount was 23 million yen, with 10 million yen remaining and a loan of 10 million yen. The remaining balance is 20 million yen. With this, we have to cover everything other than the interior and exterior renovation costs, as well as the living expenses for Mr. and Mrs. Tanigawa until the opening. We decided not to do much with the exterior and use it as is, but the sign is a different matter, so that might cost nearly 1 million yen. Signs are surprisingly expensive.
The hotel's name is "Kaze no Mori" (Wind Forest). In Matsuzaki, a strong wind called "Zukin-hagashi" (Hood-remover) blows in the winter. They say it also means to protect guests from that wind. The cafe's name was taken from a Thai cafe and named "Hana no Ki" (Flower Tree). I think both are lovely names. We decided to put up separate signs for each. Keiko-san was enthusiastic about planting many flowers in the garden. She says she will also plant flowers on the river side where we had planned to add the terrace.
It seems the parking lot can only hold six cars. Since they need two for their own use, there is only room for four guest cars. If that's not enough, we might have to rent a parking space. However, that might be something to decide after opening.
Mr. and Mrs. Tanigawa came to learn roasting every Sunday. It seems they have made a lot of progress. "My extraction has improved," Mr. Tanigawa said happily. "Really?" I asked, but since he said "It's okay," it must be true.
The rest was drinks and food. In the morning, we will serve rich, smooth, home-roasted coffee using a large flannel dripper on a stand. Since this is the main product, if it's not delicious, the hotel will go under. And we will have them refill as many cups as they like.
In addition, we will serve a salad made with locally grown vegetables. Keiko-san was enthusiastic about having them eat plenty of fresh vegetables. The bread will be buttered toast. This will also be all-you-can-eat. Finally, we will serve egg dishes. Omelets using two eggs, fried eggs, scrambled eggs—they say they will take orders at the table in the morning and then cook them. That's all for breakfast. It's just that, but Mr. Tanigawa says he wants to make it a breakfast where each item shines.
Once the cafe starts, the food menu will increase a little. First, there is pasta. This is just one dish. Basically, it's tomato aglio e olio, but there's no point in serving various things if they aren't delicious. Guests staying at the hotel might want to eat it too, but that will be after the cafe opens.
Other than that, there will be one sandwich dish, two toast dishes, and one hot dog dish.
They also plan to offer cheese platters and desserts such as waffles and ice cream. The plan was to try these menus and change them as we go.
Drinks will include coffee, tea, cafe au lait, iced coffee, iced tea, and iced cafe au lait, and for alcohol, they plan to stock small bottles of beer and glasses of Cava. Even when I think about it, that seems sufficient, and I wonder what more could possibly be needed. It should also be an answer to the current trend of cafes that only have a large variety of items.
The cafe will close at 5:00 PM, and from after 6:00 PM, it will be time to transport people heading to restaurants. When they check in, we will hand them a simple menu of partner restaurants and have them tell the front desk where they want to go. For those who want to manage on their own, we will hand them a paper at check-in with the locations of convenience stores, ramen shops, and okonomiyaki shops written on it, and have them move on their own. Since everyone will return at different times, we won't go to pick them up. If they prefer a car, we will have them return by taxi. Thus, the general basic flow for dinner was decided.
As for room cleaning, if the two of them can't do it, they will have to ask local housewives or elderly people to help out part-time, but they decided to try doing it themselves as long as they can.
Mr. Tanigawa has been researching and visiting various second-hand furniture stores, but it seemed difficult to know when to buy. If you buy too early, you'll have trouble finding a place to put it, and it shouldn't get in the way of construction.
However, if you find good furniture, you'll want it, and you never know how long it will be there. They might hold it for a short period, but a long period would be impossible. Various complicated problems like that keep coming up.
I'd like to buy bedside tables, bed lamps, and stands to put on the counter if I find good ones, but there's no place to put them. Various difficult problems arise, but that's always the case. You can't become a professional unless you can enjoy that. But that might be impossible for someone starting a business for the first time.
The roaster has been decided as a Fuji Royal 1K machine, and it seems the order has been placed. There was a time when it took over a year from the order to delivery, but now it arrives quickly. We won't install a smoke eliminator. Since it's a 1K machine, we decided not to install one, thinking it would be fine.
In this way, preparations proceeded steadily. "It will work out somehow" is my basic life motto, and it seemed like the mini-hotel with a bed & breakfast and a cafe would also work out somehow.
