Prep at night, still moist and tender in the morning! "Chin-jao Chicken" [Green Pepper Steak with Chicken Breast]
Good evening, this is Oton's Kitchen😊
Today, I'm introducing "Chin-jao Chicken" using chicken breast, which stays moist and tender even if you prep it at night for the morning.
This is for one serving.

When you think of Chin-jao Rosu (Green Pepper Steak), you think of beef, but the appeal of making it with chicken breast is that it's light and easy to eat even in the morning.
It's a favorite recipe that I often make for my son's breakfast too😊
⸻
■ Ingredients (for 2 servings)
Chicken breast: 1 piece (300–320g)
Green peppers: 2
Ginger (grated): 10g
Garlic (grated): 10g
Oyster sauce: 2 tbsp
Soy sauce: slightly less than 2 tbsp
Sugar: 2 tsp
[Marinade]
• Salt and pepper: to taste
• Sake: 2 tsp
• Mayonnaise: 1 tsp
• Egg: 1
Doing the prep work beforehand makes morning cooking truly easy.
This time, I've included photos and detailed "cutting tips," so please feel free to follow along😊
⸻
■ Instructions
① Prep the ingredients (cutting)
● Green peppers
Cut in half lengthwise, remove the seeds, flatten, and slice into thin strips.

Cut the green peppers in half lengthwise, remove the seeds, and slice into thin strips.
● Ginger/Garlic
Grate and prepare 10g of each.
※ I forgot to take photos of the ginger and garlic, but please grate and prepare 10g of each😊
● Chicken breast
First, cut it into three large pieces along the direction of the fibers.

First, cut it into three large pieces along the direction of the fibers.
Since the fiber direction varies in different parts of the chicken breast, dividing it into three large pieces makes it easier to cut and ensures a consistent texture.
→ After that, "thinly slice" (sogi-giri) each piece in the direction that cuts across the fibers.

Thinly slice each piece in the direction that cuts across the fibers.
→ Finally, cut into thin strips.

Cutting into thin strips at the end also helps it cook faster.
Cutting chicken breast across the fibers makes the final result tender😊
⸻
② Marinate (the secret to a moist texture)
Place the sliced chicken breast in a bowl, and add:
• Salt and pepper
• Sake
• Egg mixture
• Mayonnaise

Add the salt, pepper, sake, egg, and mayonnaise, and massage it in well.

The more you massage it, the better the flavor will penetrate and the more tender it will become.
👉 Points
・The egg loosens the fibers, keeping it tender even in the morning
・Mayo retains moisture well to prevent dryness
・Massaging it well helps the flavor soak in quickly
Leaving it at room temperature for about 10 minutes is fine✨
⸻
③ "Oil-blanch style" stir-fry for the green peppers
Heat a slightly generous amount of oil in a frying pan,

and stir-fry the green peppers first.

Stir-frying them quickly will give them a crisp finish.
Think of it as "passing them through oil" rather than stir-frying.
👉 Reasons
• The crisp texture of the green peppers remains
• The color turns out beautiful
Once lightly cooked, remove them from the pan.

Remove them while the color is still vibrant.
⸻
④ Combine the seasonings
• Oyster sauce
• Soy sauce

Mix these together.

Combine the oyster sauce and soy sauce beforehand.
※Sugar tends to clump, so adding it later is also fine
⸻
⑤ Stir-fry the chicken breast
You can use the same frying pan you used for the green peppers.
If there is too much oil, wipe some off.
1. Spread the chicken breast out in a well-heated frying pan

2. Stir-fry while loosening it so it doesn't stick

3. Once browned, flip it over
4. Add ginger and garlic and stir-fry until fragrant

Add ginger and garlic to bring out the aroma.
Once fragrant, return the bell peppers you set aside earlier.

Once it's fragrant, return the bell peppers you set aside earlier.
Once the bell peppers and chicken are cooked through and fragrant, it's finally time for the seasoning step.
This is where it really starts to feel like "Chin-jao," so just be careful with the heat level.😊

6. Add seasonings and sugar to finish

Adding the sugar first helps the flavors blend in more easily.
Add the combined seasonings (oyster sauce + soy sauce),
and coat everything thoroughly.

Adding the combined seasonings gives it a glossy finish and brings it all together at once.
Adding the sugar first allows the flavors to soak in quickly, creating a mellow richness.
Adding the seasonings afterward gives it a glossy finish and makes it look so much more delicious.😊
Once the savory aroma of the soy sauce rises, it's done!

Since there's often a little bit of the egg marinade left over, I usually make a thin omelet at this stage.
It adds one more side dish for the morning, which is super convenient.😊
7. You can also make a "breakfast thin omelet" with the leftover egg mixture

If you have leftover egg marinade, you can also make a thin omelet.
If you have leftover egg marinade,
you can also make a thin omelet in the pan while you're at it.
Serving it on the side looks great and goes well with breakfast too.😊

Perfect for adding a splash of color to your breakfast.
Once plated, it looks like this.
The green of the bell peppers and the yellow of the thin omelet are bright, making it perfect for breakfast too✨
⸻
■ How to reheat when eating in the morning
● Microwave
40-50 seconds at 500-600W
● Frying pan
Lightly stir-fry with a small amount of oil to increase the aroma✨
