I tried filleting a fish I was given... and you won't believe what it actually was๐ณ

Yesterday's events!
"Huh? What kind of fish is this?"
Looking at the fish my wife brought home,
that was the first thing I thought๐
It looks like yellowtail, but
I feel like it's a bit different...
But since we have it,
I decided to try filleting it anyway๐
To be honest,
it looks the part, but
๐ the inside is quite a mess๐
Instead of a deba knife,
I took on the challenge with my usual horse mackerel knife.

It was a bit difficult as expected...
Still, I managed to fillet it into three pieces,

and made sashimi and grilled collar๐




And when I tried eating itโ
๐ "Whoa, this is super delicious"๐ณ
The fat isn't overwhelming,
and it has a solid umami flavor.
I thought to myself, this isn't just any fish.
After looking it up later,
๐ it was a juvenile amberjack called "Shio"๐
No wonder it was so good.
Even if it's a gift,
if you put in the effort, it becomes a feast.
I think that's the interesting part of cooking๐
It's simple, but
it's genuinely delicious.
It was that kind of timeโจ
