a dish I often made
when I first started making breakfast for my son,
**"Chicken Breast Simmered in Grated Daikon"**😊
This simmered dish is
perfect for this time of year,
a dish that warms both the body and soul.

If you prepare it at night,
all you have to do in the morning is heat it up,
and it will have a moist, gentle flavor🤗
This time,
I will introduce how to make it so it's ready for night prep and stays moist and warm in the morning😊

[Ingredients](Serves 2)
・Chicken breast …… 350g
・Salt …… 2 pinches
・Cake flour …… 2 tablespoons
・Daikon radish …… 250g
・Ginger …… 10g
・Green onion …… to taste
・Water …… 140cc
・Soy sauce …… 2 tablespoons
・Mirin …… 2 tablespoons
・Sake …… 1 tablespoon
・Ajinomoto …… 5 shakes
・Bonito flakes …… 4g

Preparation
1. Cut the chicken breast into three pieces along the grain.

2. Now, slice the cut chicken breast against the grain, keeping the thickness even.

Slice to an even thickness
3. Heat 4g of bonito flakes in the microwave at 600W for 50 seconds,
then crush them into a powder by hand.

* Heating the bonito flakes removes the moisture
and makes them crispy, so you can
easily turn them into powder by hand.
Seasoning
Sprinkle salt over the sliced chicken breast,
and lightly coat the whole thing with cake flour.

About this much flour
Simmering
1. Put the grated daikon, water, bonito flakes,
grated ginger, Ajinomoto, soy sauce, mirin,
and sake into a pot and bring to a boil over medium-low heat.

Over medium-low heat
2. Once it boils, add the chicken breast, cover, and simmer for about 4 minutes.

Cover and simmer for 4 minutes
Finishing
It is ready once the chicken breast has turned white all over.

Turn off the heat at this point
Turn off the heat and let it cook through slowly with the residual heat while keeping it covered.
* The key to keeping it moist is not to overcook it 🤗

How to reheat in the morning
If reheating in the microwave:
Heat at 600W for about 40 seconds,
and if it's not warm enough, add 10 seconds at a time
until it is warmed through 😊
If reheating in the pot:
Please heat it slowly over low heat 😁
It is done once it is warmed through 😊
If you bring it to a boil all at once,
the chicken breast will turn out tough 😅
