The Mysterious Udon That Never Seems to Run Out Even as You Eat It

This is an udon noodle shop with locations in Saga and Fukuoka Prefectures, known for its very soft, thick noodles. It is such a mysterious udon that you fall under the illusion that the noodles never disappear no matter how much you eat.

This udon shop is called "Maki no Udon." Maki no Udon originated in Itoshima City, Fukuoka Prefecture, and is said to be named after the place name "Maki." So, it seems it is called "Maki no Udon" because it is an udon shop in Maki. The soup for this udon shop is made in one location and delivered daily. For this reason, they only have shops in locations where they can deliver from the factory within an hour and a half. You can really feel their incredible dedication. However, the shops are very down-to-earth and the prices are affordable. Moreover, green onions are placed on the table for you to add as much as you like, and they even bring you extra broth to add if you run out. I love green onions, so I like to add enough that the noodles are no longer visible. (By the way, for the title image, I held back on adding the green onions for the sake of the photo.)

While Fukuoka udon is characterized by being soft and lacking chewiness, this Maki no Udon feels especially soft. When ordering, you can choose between soft, medium, or firm noodles, but in the end, they all turn into soft noodles.

Since there are many udon shops in Fukuoka, it might be fun to try comparing them. Oh, and there is even a segment on Fukuoka TV programs that introduces udon shops within Fukuoka Prefecture.
