| Getting a head start on spring with "sour foods"
Well, this time I'm introducing a recipe you can make in a single frying pan.
Don't you suddenly crave sour foods as spring approaches?
Even if there are still cold days, it's an annual tradition for the body tocrave "sour" or "refreshing" foods as if to get a head start on springaround the beginning of spring (early February), following the calendar.
This time, it's a "savory and tart" dish that lets you eat plenty of cabbage. Chicken wings have a high ratio of bone and skin, so they are rich in gelatin and fat, making them suitable for stews and soups with depth.
I think many people have an image of chicken wings being "troublesome" or worry about how to use them, butI would be happy if you knew that you can make such a delicious side dish just by simmering them quickly!

| Ingredients
Chicken wings... 4-6 pieces
Cabbage (roughly chopped)... 200g
Ginger (julienned)... 15g
Water... 160ml
Soy sauce... 2 tablespoons
Mirin... 2 teaspoons
Pickled plums (umeboshi)... 2 pieces (30g)
| How to make

Cut off the tips from the joints of 4-6 chicken wings.
The part from the joint of the chicken wing (to the right of the knife in the photo) is called the wing tip. You can save the wing tips to make chicken soup.

Heat a frying pan over medium heat without adding oil, and sear both sides of the chicken wings until they are lightly browned.

Add 160ml of water, 15g of julienned ginger, 2 tablespoons of soy sauce, 2 teaspoons of mirin, and 2 pickled plums (30g)and bring to a boil. It is fine to leave the pits in the pickled plums.

Add 200g of roughly chopped cabbage, cover, and simmer over low heat for 5 minutes.

It was done in no time!I recommend breaking up the pickled plums while eating to change the flavor along the way. You can feel the richness of the chicken wings within the savory tartness, so it's more satisfying than it looks.
