Heidi Winery [Sake Diary: Wajima Winery Edition]
I am in the middle of my Tokushima travel diary, but I am bringing you a sake diary here.

Today, I would like to introduce
a winery located in Monzen-machi, Wajima, Ishikawa Prefecture.
Regarding the disaster that struck the Noto region last year (2024),
during the New Year's Day earthquake, infrastructure (electricity, gas, and water) was cut off and the restaurant building was completely destroyed, causing significant damage. However, it seems they managed to avoid catastrophic damage to the winery's lifeblood (the wine and the vineyards).
However, the heavy rains in September caused immense damage to the vineyards.

All I can do is buy and drink the wine!
So, I got four varieties.
Exciting
・Zen no Sato Wine (Rouge)
・Yama Sauvignon
・Chisato Petit Verdot
・Chisato Merlot Rosé
The first two use domestic grapes. The latter two are brands brewed from grapes harvested in their own vineyards.
The concept of the flavor is,
aiming for a pure wine that creates a high-quality pairing with the tastes of Noto, such as blue-backed fish raised in the rough waves of the Sea of Japan and wild vegetables growing in the satoyama...
So, all four varieties I tasted this time, despite being red and rosé, had a flavor that suppressed bitterness and emphasized acidity. Rather than pairing them with Noto beef, I would want to pair them with grilled mackerel. They are a little expensive for everyday drinking, but I guarantee that the taste is worth more than the price.
My absolute favorite was the Zen no Sato Wine (Rouge). It went down so easily that in no time at all... I had an empty bottle!
A brand I want to repeat.

When it comes to places or things I have a connection with, my antenna goes up. In my case, I become sensitive to news about places I have visited on my travels. There are times when you react sharply to information you would normally overlook, right?
Behind things, there are stories. Stories that are uniquely your own. When you taste food or sake, the memories of that land come back to life.
My thoughts go out to Wajima.
