[Stir-fried Chicken Breast and Mushrooms with Plum] Super healthy with chicken breast and mushrooms!

<Ingredients> (Serves 2)
A) Chicken breast: 1 piece
Salt: 1/2 tsp
Potato starch: 1 tbsp
Rice oil: 1 tbsp
B) Pickled plum (8% salt content): 1 piece
Mirin: 1 tbsp
Sugar: 1 tbsp
Soy sauce: 1 tbsp
Shimeji mushrooms: 1 pack
Green shiso leaves: to taste
Rice oil: to taste

Remove the skin from the chicken breast, cut it into strips, then slice into bite-sized pieces. Rub in the salt, potato starch, and rice oil in that order (this creates the versatile chicken breast base).
For B, use kitchen shears to cut the plum meat from the pickled plum, then mix with the remaining ingredients.
Separate the shimeji mushrooms into small clusters, cut the green shiso leaves into thin strips, briefly rinse in water, and squeeze dry.
Heat a frying pan, add rice oil, and cook the chicken from step 1.
Add the shimeji mushrooms and stir-fry together.
Add the sauce from step 2, mix everything together, and stir in the green shiso leaves at the end.

Adding shimeji mushrooms to the versatile chicken breast plum teriyaki.
When cooking the chicken, stir-fry the shimeji mushrooms together,
and then just coat with the plum sauce in the same way.
The umami of the mushrooms is added to the chicken,

Besides shimeji, you can also use
maitake or king oyster mushrooms.
