<Ingredients> (Easy-to-make quantity)
Azuki beans 200g
Water 800ml
Sugar 200g
Mochi (rice cakes) as needed

Put the azuki beans and water in a pot, bring to a boil, then turn off the heat and let it sit for 30 minutes.
Turn the heat back on and simmer for 30 to 40 minutes (add water if it looks like it's running out).
Once the beans are soft, open the lid and boil down the liquid.
When there is almost no liquid left, add the sugar and mix.
Place the mochi in a bowl and pour the piping hot Okuzono sweet red bean paste over it.

**********************************************
Okuzono sweet red bean paste
hardens when it cools down,
but it becomes loose when heated.
So, just by heating it as is,
Okuzono sweet red bean paste becomes Okuzono Zenzai.
If you prefer it a bit thinner,
you might want to add a little water.
That's the kind of consistency it has.
It's delicious to serve Zenzai with something salty.
Like salted kelp.
Rather than adding salt to the red bean paste,
I prefer to serve something salty on the side and have a little bit of saltiness in between.
Please give it a try.
