[Okuzono-style Ginger Pork] Super healthy with maitake mushrooms♪

<Ingredients> (for 2 servings)
A) Pork shoulder loin (thinly sliced): 150g
Potato starch: 1 tsp
Soy sauce: 1 tsp
B) Onion (grated): 1/4
Ginger (grated): 2 pieces
Soy sauce: 1 tbsp
Mirin: 1 tbsp
Sugar: 1 tsp
Maitake mushrooms (torn by hand): 1 pack
Onion (thinly sliced): 1/4
Salt: a pinch
Sesame oil: as needed

Massage the potato starch and soy sauce into the pork from A.
Mix B to make the sauce (set aside a little bit of the ginger).
Heat a frying pan, add sesame oil, and add the pork. Push the pork to the side, add the maitake mushrooms to the empty space, sprinkle with a little salt, and stir-fry.
While occasionally checking on the pork, stir-fry the maitake mushrooms until they soften. Then, mix the pork and maitake together, add the onion, and stir-fry everything together.
Add B, coat everything evenly, and finally mix in the ginger that was set aside.
Serve on a plate with cabbage and tomatoes.
