Sprinkle the cod with salt and water (about 1/2 tsp), let it sit for about 5 minutes, wipe off the moisture with a paper towel, and coat the skin side with potato starch.
Heat a frying pan, add rice oil, and sear the cod skin.
Place the fish flesh-side down, add B, top with ginger and long green onion, cover, and steam-cook (3 minutes).
Add the cut wakame seaweed, cook briefly, transfer to a serving dish, and drizzle with sesame oil and ponzu soy sauce if desired.

* I recommend using fresh cod rather than salted cod.

If you were to add
any other ingredients to the steamed cod with scallions
my recommendation is cut wakame seaweed!!
The aroma of the sea goes incredibly well with the cod!!
I recommend adding the cut wakame seaweed dry at the very end.
You don't need to rehydrate it beforehand; it will rehydrate instantly in the steaming liquid.
Sesame oil goes great with this, so
if you have some, try drizzling a little bit over it.
It's super delicious.
