Until then, I used a Hot Cook to make curry. But while roux curry is delicious, I worry about the calories and the high salt content.
I used to think spice curry was healthy but too difficult to make, but using this book as a reference, it's actually very easy! You can make it in just one frying pan. The book suggests adding yogurt at the end to make it mild, but in our house, we make it without the yogurt.
This curry is great over rice, or it can serve as a side dish. In our home, we season it with soy sauce koji and add ginger, making it a true medicinal curry!

Yesterday, I made a simple curry by just stir-frying green peppers, eggplant, onions, a can of tomatoes, and chicken breast, then mixing in some curry powder. It was a hit with my family, too.
