January 21, 2025: What is Kanjikomi?
Jan 21, 2025
I bought some soy sauce made using the traditional kanjikomi (cold-season brewing) method and enjoyed it with my family🍶.
We were so impressed, saying, 'It has such a deep richness and aroma, it's delicious!' and we savored it slowly😊.
Then, mumuwawa asked with great interest, 'What is kanjikomi?' So, we decided to look it up together!
Kanjikomi refers to the preparation of fermented foods during the cold winter season❄️.
In this season of severe cold...
✨ Harmful bacteria are less likely to multiply, making fermentation stable.
✨ The slow fermentation process brings out the umami and aroma.
✨ It also improves shelf life, allowing the delicious taste to be enjoyed for a long time.
People in the past used the cold to their advantage to create even better soy sauce!
I was once again moved by this wisdom and harmony with nature✨.
The kanjikomi soy sauce was also delicious on sashimi and simmered dishes.
Wishing everyone a wonderful day today✨.
