Karigane

Hakugan
|Nature and Flavor, same as |Wild Goose|. |Taste is |mild, with |little |fat, and is |excellent. |In autumn, |the eighth month, the hakugan |arrives |first, |followed by the karigane. The magan |arrives |last. |In spring, |at the end of the second month, the magan |returns |first, and by the third or fourth month, the hakugan |returns |last.

Hakucho
|Swan |Taste is |sweet, |highly |warming, and |contains |poison. |Salt-cured, or |alternatively, |roasted and |eaten, it |increases |vitality. |Common in the |Kanto and |Oshu |regions. |Extremely |fatty, and |if overeaten, it |causes |eye diseases and |head sores.
