Amazake Grandma's Curry

I wonder what this is... this depth of flavor that expands in such a complex, multidimensional way(*’д’*)✨ I feel like my limited vocabulary and experience as Ayumi aren't enough to explain it...
The recipe book says, “A gentle, nostalgic taste is popular.”
With the 'Tomato-flavored Vegetable Curry' I made last time, it already felt like a 'nostalgic taste' to me, but this one is even 'gentler' than that.
Indeed, thanks to the amazake, it's a curry that feels like a lump of love, embracing everything deeply just like my grandma(*ᴗˬᴗ)⁾♡
And it doesn't attack me at all.
The mucous membranes in my mouth and the curry roux are melting into each other so much that I can't tell where one ends and the other begins.
With the depth of the mashed creamy amazake, it's truly
enough to make my cheeks fall off(*//艸//)♥

🌼Amazake Grandma's Curry🍛
〚Ingredients〛(Serves 6)
Onion 300g → Cut into 1cm thick wedges
Carrot 180g → Cut into 5mm thick ginkgo leaf shapes
Tomato 100g → Roughly chopped
Potato 160g → Cut into 5mm thick ginkgo leaf shapes
Garlic 1 clove → Grated
Mixed oil 4 tbsp
Curry powder 10g
Brown rice flour 60g
Salt 1/2 tsp + 1 tbsp
Water 4 cups
Soy sauce 1 tbsp
Amazake mash 1/2 cup
Mixed grain rice, as needed

※Since it's used as a sweetener, ferment for 20 hours and process into a paste using a food processor☝️
〚Preparation〛
Boil the potatoes in boiling water with a pinch of salt (not listed in ingredients).
〚Instructions〛
① Put oil and garlic in a pot and heat. Once the garlic becomes fragrant, quickly stir-fry the onion.
② Add the carrots and stir-fry lightly, then add the curry powder and brown rice flour and stir-fry well until the powder becomes light and cheese-like.

③ Once the brown rice flour is cooked, add the tomatoes and salt (1/2 tsp) and mix together.
④ Remove from heat, add all the water at once, and stir well to dissolve the brown rice flour so no lumps remain.
⑤ Return to heat and once it boils, simmer while stirring until it thickens.

⑥ Add salt (1 tbsp) and soy sauce to ⑤, simmer on low heat for 10 minutes while stirring occasionally, then add the amazake mash and simmer for another 10 minutes.

⑦ Add the pre-boiled potatoes and simmer a little until they are soft.

⑧ Serve the rice and curry on a plate🍛, and it's done!

By adding the potatoes later, I achieved the same size and level of tenderness as the carrots.
When the shape, texture, mouthfeel, vibration, and energy are all aligned, they harmonize in a magnificent way.♬♪
