Burdock Root Macrobiotic Kinpira
There are so many things I love about Mr. Burdock.
The way he gives off a unique scent when stir-fried in oil. People call it 'harshness,' but that's just one side of Mr. Burdock.
The energy he uses to dive straight toward the center of the Earth with his long, thin body is definitely directly linked to that powerful, savory flavor.
I also quite like how he gets shy and changes color as soon as you cut him. Ah... I suppose he's just protecting himself, probably...
Since I started practicing Mirai Shoku Tsubutsubu, I've been buying nothing but burdock root. It's gotten to the point where either white leeks or burdock roots are always sticking out of my backpack.
If they're too long, I carry them home hanging from my shopping bag. Since the beginning of this year, the lady at the local greengrocer finally started saying to me...
"Aren't you carrying a sword on your back today?"
That's what she started saying ( ⸝⸝⸝•_•⸝⸝⸝ )💦
Ayumi's paternal ancestors were samurai (this is actually true), so it's not entirely wrong, and I always giggle at the register (((*≧艸≦)💦

It naturally makes you want to eat more rice🍚🥢
〚Ingredients〛
Burdock root: 100g
Carrot: 100g
Oil: 2 tablespoons
Water: 1 cup
Soy sauce: 3-4 tablespoons

〚Instructions〛
① Heat oil in a pot and stir-fry the burdock root. Once the harshness dissipates and the sharp scent turns into a sweet aroma, add the carrots and stir-fry quickly.
② Add water, cover with a lid, and simmer over medium heat until the water is reduced by about half.
③ Add soy sauce to ②, simmer until almost all the liquid is gone, then while stirring, reduce the remaining liquid at the bottom of the pot to coat the vegetables, and continue cooking until the liquid is completely gone.

The key is to boil off the water (yin) at the end and simmer it down thoroughly. When it glistens, that's the sign of harmony.
Whether it's for staples, meal prep, bento side dishes, or when you just need one more dish☝️, leave it all to Mr. Burdock😌
By the way, the burdock was a bit salty the next day, so next time I might use 3 or 3.5 tablespoons of soy sauce instead of 4. I'll adjust it based on the weather, my physical condition, and my preferences😊
