It is always encouraging.
Today, my daughter received a gift of
Valentine's ganache
from her friend.
I wanted to try making it myself,
so I looked up a recipe on Gemini.
For yourself, or as a gift.
This time, I will introduce a
foolproof 'basic ganache' recipe
that can be made with just two ingredients.
If you are interested, why not read
to the end and make it with me?
The secret to a smooth melt-in-your-mouth texture
is the temperature when mixing.
🍫 Ganache Recipe
🕒 Ingredients (easy-to-make amount)
• Chocolate bars
200g (4 bars)
• Heavy cream
(dairy, 35% fat or higher recommended) 100ml
• (Optional) Cocoa powder for finishing
As needed

🥣 How to make (Simple 3 steps)
1. Chop the chocolate
Finely chop the chocolate and put it in a bowl.
Point
The finer you chop it, the less likely it is to have unmelted bits,
resulting in a better mouthfeel.
2. Heat the heavy cream and mix
Heat the heavy cream in a small saucepan (or microwave)
until just before it boils,
and pour it all at once into the bowl with the chocolate.
Let it sit for about a minute, then
slowly stir from the center to melt.
3. Chill to set
Transfer to a tray lined with parchment paper, and
chill thoroughly in the refrigerator for2 to 3 hours.chill thoroughly.
Once set, cut into your preferred size,
dust with cocoa powder, and it's done!

✅ Tips for success
🥣Moisture is strictly forbidden!
If there is any water on the bowl or spatula,
the chocolate will separate and become grainy.
Always use dry tools.
🫕Be careful not to overheat!
Heating chocolate directly over a flame, or
adding heavy cream that is boiling hot
will cause the oils to separate.

🔪 3 steps to a clean cut
1. Warm the knife thoroughly
This is the most important part!
Dip the knife into a cup of hot water or
warm it over a flame for a few seconds (just enough so it doesn't get too hot).
• Reason
By melting the surface of the chocolate slightly with the heat of the blade, the knife will slide through without resistance.
2. Repeat 'Warm → Wipe → Cut'
After every cut,
clean the chocolate off the knife
with a damp cloth or paper towel,
and warm it again before making the next cut.
• Reason
If you leave chocolate on the blade,
the stickiness will drag the cut edge and make it look messy.
3. Use a 'push cut'
Instead of moving it back and forth like cutting bread, cut by pushing straight down from top to bottom in one motion.
• Reason
By minimizing friction, you can prevent the shape from collapsing.
💡 A secret trick for an even more beautiful finish
• Trim the edges
Right after taking it out of the tray, trim a few millimeters off the rounded corners to make it a 'perfect rectangle' before you start cutting, and everything will look uniform in size.
• Use thread
If you aren't good with a knife, you can also use a thin thread (like sewing thread), pull it taut, and press it down from above to cut.

🎁 Ganache wrapping ideas
1. The Classic! "Wax paper x Mini box"
Ganache melts easily,
and cocoa powder tends to scatter,
so putting it in a box is the safest option.
• Method
Line a small gift box (like those from a 100-yen shop) with crumpled wax paper, and arrange the chocolates.
• Tips
To keep the chocolates from sticking together,
leave a little space between them, or
place them in small bento side-dish cups
(like paper ones or black aluminum ones) for a professional look.
2. Candy-style "Twist wrap"
This is a convenient method when you don't have a box,
or when you want to hand them out to many people.
• Method
Place one piece of chocolate in the center of a square-cut piece of wax paper,
and twist both ends.
• Tips
Securing the twisted ends with twine or masking tape
makes them look instantly adorable.
3. Clear gusset bag x Cardstock
Recommended when you want to show off the cross-section.
• Method
Arrange a few pieces of chocolate on a small piece of cardstock (or craft paper),
and place it directly into a clear wrapping bag (OPP bag).
• Tips
Just by folding over the opening of the bag
and applying your favorite sticker, it will look as clean and professional as something bought in a store.
⚠️ Points to note when wrapping
• Chill thoroughly
If the chocolate is even slightly warm,
the cocoa powder will stick all over the bag or box.
Work quickly right after taking them out of the refrigerator.
• Include an ice pack
If it will take time before you hand them over,
it is best to keep them in an insulated bag with an ice pack.

The moment homemade ganache melts in your mouth
is the ultimate treat.
Wishing you and your loved ones
a wonderful sweet time 🍫
♡Happy Valentine♡
