A restaurant at rock bottom. A grand turnaround from a monthly deficit of several hundred thousand yen to a thriving store with annual sales exceeding 30 million yen.

One day, a bank I am on good terms with entrusted me with a case for a certain restaurant (mainly Western cuisine), saying, 'Even we (the bank) don't know what to do anymore. Could you help the president?'
When I entered the site, it was in a state of massive hemorrhage, bleeding several hundred thousand yen in red ink every month. Annual sales were only about 10 million yen. Although there were a decent number of customers during the day, the place was deserted at night, and the owner was completely pale, saying, 'I can't even make the payments at the end of the month.'

I abandoned the previous policy of being a 'stiff, dinner-focused Western restaurant' and completely transformed the menu into a 'all-you-can-drink/all-you-can-eat' bar style where everyone could eat and drink without hesitation. Furthermore, to attract female customers, I added 'fruit-filled chuhai' and 'authentic cakes' sourced from an acquaintance who is a pastry chef to the menu.
What was the result? The customer base became dramatically younger, and the occupancy rate at night soared. Sales instantly exceeded 30 million yen per year, and the store, which had been in the red by several hundred thousand yen every month, was reborn as a super-thriving store that generated several hundred thousand yen in 'profit' every month.
The moment when the owner, who had been facing total darkness, smiled again. This is one of my origins as a consultant.
