Summer Side Dish Pickles

For the past few days, articles about making Frao-san's recipes have continued, but today I would like to introduce my classic summer recipe.

I make it using whatever vegetables I have on hand at the time.

While there are some things I make with approximate measurements, for my staple menu items, I measure the ingredients and keep notes on how to make them.
(I started filing them from the day my daughter asked me to write them down and save them.)

The amount of vegetables for the pickles I want to introduce this time is not fixed, but I have decided on the proportions for the pickling liquid.

Pickling liquid ingredients
・150cc water
・100cc vinegar
・2 tablespoons sugar
・1 teaspoon salt
・1/2 teaspoon peppercorns
・1 bay leaf
・1 chili pepper

Put everything in and bring to a boil. Once it comes to a boil, turn off the heat immediately and let it cool as is.

While the pickling liquid is cooling, cut the vegetables.

After cutting the onion in half vertically, cut it radially to make the pieces uniform in size.
Cut the cabbage radially as well.
Once the onion and cabbage are cut, put them in a plastic bag (remove the air) and
submerge them in water.
This means steaming them in a plastic bag.

For other vegetables, boil or steam them to cook through, then let them cool to room temperature.

Once they have cooled, put them in a storage bag and add enough pickling liquid to cover the vegetables.

I separate the cherry tomatoes because it keeps the pickling liquid clean for storage, so I keep them separate.
At this time, the quantity was large, so I also separated the onion and cabbage.

Remove the air.
Let it rest in the refrigerator overnight and it's ready.

My summer refrigerator looks like this every year.
My staple side dishes are pickles, ratatouille, and Japanese pickles.
The things I always keep on hand are natto, tofu, and apple cider vinegar.

I've been posting a lot of cooking notes lately, but thank you for reading to the end again today without getting tired of them.

Here is my second staple summer side dish, ratatouille.

I checked to see if there was a pickle recipe among Furao-san's recipes, and I found one on X.
I didn't know how to paste the link, so I'll just paste a copy here.

Furao-san, you're amazing. It really is simple!!
Please try my recipe in the first half of this article when you have time, and definitely try making the recipe above as well.🤗

I'm going to try making it too.😊✨

Wait,
what was that opening sentence about wanting to introduce my summer staple recipes today?

Today, I also want to recommend Furao-san's recipes.

Side dishes should be simple.
Please do check out Furao-san's recipes.♡

I have also been making various things.
