Enjoying Taiwanese Tea with All Five Senses: Qingxiang Dongding Oolong Tea
Today, I would like to talk about Taiwanese tea.
The other day, I visited a shop run by a Taiwanese pastry chef.
You can enjoy Taiwanese tea and Taiwanese black tea along with baked goods.
I bought some sweets to take out. I also purchased several types of Taiwanese tea.
They provide it in tea bags, each portioned for one person.
When I mentioned, "I love Taiwanese tea," they taught me how Taiwanese people usually brew it.
It is a way of brewing using a small cup instead of a teapot.
Put the tea leaves in a small cup (about 2g), pour in hot water, and once you finish drinking, add more water.
As you progress from the first infusion to the second, you increase the steeping time.
The first infusion steeping time is 30 seconds. You can simply feel the vivid freshness of the top notes.
The aroma fills your nose and mouth. It feels as if all your senses are being lifted by the freshness.
As you continue to the second and third infusions, you enjoy the way the tea leaves gradually unfurl.
The aroma becomes gentle, and the flavor deepens.
When you bring the teacup to your mouth, you can hear the sound of air popping. The clear, pale golden color of the tea. I savored it with all five senses.
Perhaps the air of the Taiwanese mountains is wrapped inside the tightly rolled tea leaves.
Even by the third or fourth infusion, when you pour hot water, the air still comes out.

I love tea grown at high altitudes.
Because I can feel the pure atmosphere of the highlands.
When I drank it this way,
I realized I could taste the highland air
along with the tea.
It was a delightful discovery.
